香菜是一种调味型蔬菜，在做汤时用它点缀一下有画龙点晴的效果，用来与羊肉或是鱼类搭配，也能起到去膻或是去腥的作用，所以深受菜友们喜欢，种菜时总喜欢种植一些。
不过种植香菜，在采收时一般都会采收连根拔起的方式，但这样的话只能是采收一次，所有香菜拔完了，接着要新种植一茬，而且既使剩下的没有拔完，时间一长也会变才抽薹，所以不免有些可惜。
其实，香菜是可以多茬采收的，其作法就是采收香菜时，用剪刀剪取其根部两厘米往上的部分，把它的生长点留下，这样过不了几天，就会它香菜心的地方生出新的香菜叶子来，而且生长速度也很快，半个月到20天左右，就能再次生长20厘米左右，就可以接着采收第二茬、第三茬。
而且采用这种方式采收香菜，就不会出现香菜因为未及时采收而变老抽薹的情况了，新长出来的香菜相对生长时间较长的香菜也更加鲜嫩，真可谓一举两得。
当然，采用这种方式采收香菜，头两茬基本上是没什么大问题的，但越往后的话，容易出现营养根不上，所以每次采收一茬，再次浇水时一定要配上一些肥料，这样经常为其补充营养，才能源源不断的采收香菜。
别看这么一个方法，香菜能多采收三到五茬，如果是家庭种菜，这个方法真的是很值的尝试。
